Mojadara for Thanksgiving

It’s already time for the annual Thanksgiving feast at my friend Linda’s house again! Tomorrow, I will be spending time with good friends, joking, sharing stories, laughing, and reviewing all the things we have accomplished this year; and of course, eating.  Linda serves a delightful turkey and dressing, and the rest of us bring sides and desserts.

This year I am making something a little different – Mojadara.  It is a Mediterranean rice and lentil dish topped with caramelized onions – yummy!  Many of my friends are either vegetarians, very fond of vegetables, or trying to eat more Mediterranean dishes; so it seems like the right choice.

Through experiences, I continue to move toward a more global view of the world.  Traveling and on line classes have done much to help make the world a smaller place for me.   I am also glad that I have had the opportunity to form friendships with people that have created dishes like Mojadara.  And, now that I think about it, preparing and sharing dishes inspired by people from a different part of the world is how the tradition of the Thanksgiving feast was started!
